A perfect recipe for those with a crazy busy schedule. This recipe is easy to make, and is filled with simple flavors. If you don’t have time to prep a butternut squash, just buy it already peeled and cubed. This is a soup that is versatile, and fun to make. Time to pour a big bowl of delicious Butternut Squash, Sausage, & Vegetable Soup.
In September I was part of a fun group that shared recipes perfect for tailgating. I received several different containers of herbs from Gourmet Garden Herbs. Their herbs are perfect in soup, and definitely provide gorgeous flavors.
I love keeping recipes simple. Not only do many of you have busy schedules, my husband and I have an odd schedule. We actually just added the vegetables that were available in our refrigerator. So don’t make any extra trips to the store. Just let yourself enjoy a cozy soup, that will warm you from the inside out!
- 12 oz pkg Polish beef kielbasa, diced
- 3 cups butternut squash, peeled and cubed
- 1 medium onion, diced
- 2 cups water
- 6 cups chicken stock
- 2 medium zucchini, peeled and cubed
- 1 red bell pepper, cut into large pieces
- ½ Tbsp Gourmet Garden chunky garlic
- 1 Tbsp Gourmet Garden Italian herbs
- Salt and Pepper to taste
- Rice or pasta (optional)
- In large soup pot, burner on medium-high, add water, chicken stock, and cubed butternut squash.
- Next add onion, zucchini, red bell pepper, garlic, Italian herbs, Polish keilbasa, and salt & pepper.
- Bring to a boil, then reduce to low heat and let cook together for 15-20 minutes.
- Enjoy!
